Poached Salmon with Dill


Served with Golden Oats Medley, this is a light, very healthy and elegant meal!

 

 
 

1 salmon, 2-3 lbs
1 small red onion, sliced
2 cloves garlic, chopped
1 lemon, thinly slices
2 tbsp butter
Several branches of fresh dill
Sea salt, pepper

Preheat oven to 425 degrees.
Join 2 sheets of foil with a couple of folds. Place on baking sheet and coat with cooking spray or olive oil.
Wash salmon; dry with paper towels.
Sprinkle with sea salt outside and inside.
Fill cavity with half the onion, garlic, dill and lemon.
Cover salmon with remaining ingredients. Sprinkle generously with fresh pepper.
Fold and seal foil over salmon.
Bake 15-20 minutes, depending on thickness of salmon.
