Golden Oats Medley

I found this little gem of a recipe in a tiny Quaker Oats cookbook.
It is a fabulous substitute for potatoes, rice and pasta.

 
 

1 1/2 cups whole oats (uncooked)
1 beaten egg
3 tbsp butter
1/2 cup chopped red, yellow or green bell peppers (or a combination)
1/2 red onion, or 1/2 cup chopped shallots
3/4 cup chicken or vegetable broth
1/4 tsp salt

 


Combine oats and egg in medium-sized bowl. Mix well.
Melt butter in heavy skillet.
Add peppers and onion. Sauté lightly.
Add oat mixture.
Cook over medium heat, while stirring about 2 minutes.
Add broth and salt. Cook, stirring occasionally, until liquid is absorbed.

Serves 4.
