Yogurt
Peach Muffins
1/3
cup fructose
2/3 cup vegetable oil
1 egg
1 tsp vanilla
1 cup yoghurt
1 tsp baking soda
1 tsp salt
2 ¼ cups flour
1 ½ cups chopped peaches (fresh, frozen or canned)
½ cup chopped nuts

Pr eheat
oven to 325 º. Mix sugar, oil, egg, vanilla and yoghurt.
Beat well.
Combine dry ingredients in a bowl.
Slowly stir into creamed mixture (do not beat or over mix).
Fold in peaches and nuts.
Bake for 25 minutes or until done.
Tip:
try fresh raspberries or blueberries instead of peaches, and
always remember to drain fruit first.
