Yoghurt Fruit Muffins

I make these muffins when I have too much yoghurt on hand! The original recipe called for chopped peaches.

Use fruit from seasonal harvests. Here they are made with blueberries instead of peaches. Experiment with your favourite fruit.

 
 

Yogurt Peach Muffins

1/3 cup fructose
2/3 cup vegetable oil
1 egg
1 tsp vanilla
1 cup yoghurt
1 tsp baking soda
1 tsp salt
2 ¼ cups flour
1 ½ cups chopped peaches (fresh, frozen or canned)
½ cup chopped nuts


Preheat oven to 325 º. Mix sugar, oil, egg, vanilla and yoghurt. Beat well.
Combine dry ingredients in a bowl.
Slowly stir into creamed mixture (do not beat or over mix).
Fold in peaches and nuts.
Bake for 25 minutes or until done.

Tip: try fresh raspberries or blueberries instead of peaches, and always remember to drain fruit first.
