cup butter, softened
1/2 cup tofu (I use the soft tofu that comes in tubs from
the oriental grocer.)
1/3 cup sugar
2 egg yolks
2 cups flour (I use either all spelt, or a blend of whole
wheat, spelt, oat, barley, depending on what I have on
hand.)
1 cup jam
Confectioners sugar
Chopped walnuts or almonds or other favourite nuts
Cream
butter, tofu and sugar. Beat in eggs yolks, then stir
in flour, half a cup at a time. Press half the dough
into a 9? square baking pan. Spread with jam and top
with remaining dough. Dough will be thick; it can be
dropped by half spoonfuls to cover jam.
Bake
at 375 deg F for 35 minutes. Cool. Cut into bars (or
squares).
