{Carrot Ginger Soup

Here's another great fall offering, and you'll never know your eating tofu! This recipe is adapted from the Whole Food Recipes cookbook that came with my Vita-Mix. The raw ginger gives it a nice bite.

By the way, there are some incredible recipes in that cookbook!

}

2 cups carrots
1/4 small onion
4 small garlic cloves
2 tbsp olive oil
1/2 tsp salt
1 tbsp fresh ginger, peeled
1/3 cup tofu
2 cups vegetable or chicken broth
Fresh ground pepper

Chop carrots, onion and garlic by hand, or in blender. Sauté chopped veggies in oil about 10 minutes. Add a little broth if dry. Place all ingredients in blender. Blend on high for 5 to 10 minutes.

Serve with freshly ground pepper.
